Party Foods, Bacon Style

I love party foods and appetizers. 
Little finger foods, who doesn't love them!

This post is focused on bacon.
I love bacon!  I know, not healthy.  
I don't fix it very often but it is oh so good.

So anything wrapped in bacon is going to be good!

These are so simple to make and so addicting.

(The bacon should be wrapped all the way around. 
I didn't have enough to do that when I made this batch.)

Pork & Kraut

Moving to Pennsylvania has been an experience to say the least. 
Don't get me wrong, I love the area where we live. 
 
One of the things that has been different is some of the food.
Pennsylvania Dutch cooking to be more exact.
They tend to make everything sweet except their tea.
 

One of their traditional dishes is Pork & Kraut. 

Cooked in a Crockpot and served with Mashed Potatoes and Gravy.
Perfect on a cold winter day.  The leftovers are good too.

Cheesy BBQ Chicken

Are you tired of the same old chicken recipes? 
Well here is a new twist that is quick and easy. 
The perfect kind of recipe in my book.
 
Cheesy BBQ Chicken

 
First, you need some chicken. 
I used boneless skinless chicken breast. 
Simply cook in a skillet with a little seasoning of your choice.
 
While the chicken is cooking, sauté some mushrooms and onions.
I seasoned with garlic and black pepper.

 
Grab some BBQ sauce and cheese.
 
 
Put a slice of cheese on each piece of chicken and let it melt.
Plate the chicken.  Top with mushrooms, onions, and BBQ sauce.

 
Very tasty.
I served with French Fries and Green Beans.
 
Now, I went ahead and cooked 2 extra pieces of chicken. 
Plus I had extra mushrooms and onions. 
Adding a couple of potatoes,
I used the leftovers for a second dinner.
(I did not add the BBQ sauce to the leftovers.)
 
 
Peel, chunk potatoes and cook them in a skillet. 
While they are cooking, cut up the chicken and some ham in chunks.  Add all to potatoes and top with some more cheese.
 
I served this dinner with salad.
 
I am loving that you can buy Olive Garden's salad dressing
in the grocery store now!

Happy Birthday!

Today is Hubby's Birthday.
Have I mentioned that he is the Best Husband? 
Well, let me say it again...He is!

I am so very thankful for him.

I've been cooking and baking today
making some of his favorites. 
 
First off, my steak loving guy
surprised me by saying that he was hungry for seafood. 
No complaints from me. 

So we are having crab cakes and shrimp. 
I also made a big bowl of Spaghetti Salad which he loves.

Of course there is cake...
Chocolate Peanut Butter. 
One of his favorites. 

Personally I thing the PB ruins a
perfectly good chocolate cake,
but it's not my day it is his.

Big Cup of Change

No, not the kind that jingles in your pocket. 
We are talking life altering change. 
 
 
Change can be good, bad, scary, exciting, etc. 
It goes against our human nature and
often times we face it with dread. 
Really we dread and fear the unknown
that change brings.
 
Through life there are changes that happen
that are out of our control.
Other times we decide to make a change.
 
Now I'm not one to make big changes easily. 
I tend to think of all the things that could go wrong 
and slam on the brakes! 
Good thing Hubby is the complete opposite. 
We balance each other.

Hubby has been gently pushing me towards
a big cup of change for several months. 
Let's just say that I was okay enough
with the situation to leave it alone. 
 
However, last month I became weary. 
I let it ride over the Holidays and
even thought perhaps things would get better.
 
This month, the weariness was still there and
growing stronger by the day. 
Finally after having enough,
I decided to have a big cup of change!
 
When you come to the point where you have had enough
then you are willing to take the risk of change.
 
Monday, I took the plunge and made it official. 
While the near future is uncertain,
I feel free having decided to make a change. 
 
Once we move pass our fears,
we can enjoy the refreshing
that a cup of change brings.

 
Where would the butterflies be if the caterpillar
didn't come out of it's cocoon?

Week ReCap

To say this has been a week would be putting it mildly. 
Where to begin?

Sunday we were awaken from our afternoon nap to be told that a neighbors barn was on fire.  Fire trucks from several counties went up and down the road for hours.  Unfortunately the barn was a total loss in addition to them loosing 6 calves. 
There have been several barn fires in the past months. 
There is someone going around setting the fires. 
Hope they catch the person soon.

Sunday evening we were told that Ray's uncle had been taken to the hospital and then on our way to church for the evening service we received a phone call of a family emergency.

Monday evening we were told that the doctor had said the uncle had days to maybe week to live.  So after work we went to see him and had a very good visit.  Looking back I am so glad that we did.

Tuesday evening we were told the doctor didn't think the uncle would make it through the night.

Wednesday morning we receive word that he had passed away. 

From then on there was consoling the family, the viewing, the funeral, burial, etc. 

We received some snow at some point and it has turned bitter cold.

Oh and did I mention I also had a dentist appointment as well.  For those of you who know me, the thought of going to the dentist terrifies me since I had a panic attack there one time.

Plus I am a year older as today was my birthday. 

Hubby was so sweet and treated me to an evening out
and a very nice dinner. 
It was so nice and much needed after this week.

Life is short. 
Tell those around you that you love them while you have them.
