Happy Easter

Happy Easter Everyone!!

The sun is shinning and the grass is growing.

The past two weeks have been somewhat crazy.
A week and a half ago, my father-in-law had surgery.
Then early Thursday morning, as in 1:30am early,
we received a phone call.
My mother-in-law had a heart attack.
Anytime you get one of those late night/early morning calls
you automatically know something is wrong.

Thankfully it wasn't as serious as we had originally thought.
She did not need surgery and is now back home.
The next few weeks will be recovery for both of them.
That is if they will sit still and do as they have been told!

Before that had happened, I had already started thinking and planning for Easter.  Growing up, my parents/family made all of the holidays special.  One thing mom always did was make a big jar of pickled eggs and beets the week of Easter.  I have her jar and decided to make them.  I love them!
The homemade kind!
Not those fake ones they sell in the stores
made with red food coloring.
This is what the jar looked like when I put them in the refrigerator at the beginning of the week.
This is what they looked like today when we dug in.
Yummy!!!  They looked, smelled and tasted just like Mom's.
I was so happy!!

Of course we had some ham and homemade macaroni and cheese.
That is, Ray and I had ham.  My in-laws had grilled chicken that Ray fixed last night.

On another note, I finally got a new over the range microwave.
I love it!!!  The old one had broke several months back.
We just made do without for a while.
However you realize just how much you depend on modern convenience when something brakes.
Thankfully our wonderful neighbor came over and
helped Ray put it up.
We have two of the best neighbors you could ask for!
Thanks Bill and Candi!

I made a cake for Candi yesterday.

Here are a few things that I sat out for spring.

The little chick and lamb were made for me by my sister when I was a little girl.  The tray is from Italy.  The two egg cups were my Mom's (possibly my Grandmother's).  They are really old and full of detail.  The bell was Ray's Grandma's.

I have a couple other things set out and
lots of memories that I could share.
However I think this post is getting long enough.
More later.
Enjoy the rest of your day!
